Based purely on the fact that the career of a gymnast appears to end already in their early 20s, the stakes to get good fast are much higher and I'd assume the training regime is more mature than in other sports.

It depends on mens vs womens. Women tend to peak earlier these days (16-18), but there have been elites in the twenties (Annia Hatch was 26 in '04). For men, peak age is mid twenties, but some have gone into their 30s. See Jordan:

There's also no easy way to do gymnastics recreationally nor can you earn a huge salary to do it professionally. So no incentive to keep going beyond a certain age / level of success. If it was just about doing cool tricks, I bet you'd see a lot older gymnasts.
