Was hashing this out with a friend.
I think, for certain types of people, we like novel ideas because we think insight indicates truth (or at least, a competitive edge).
But insight and truth are really two independent qualities.

I think that’s a rationalisation, some people are just more into new ideas than others. A different issue is what are the feedback loops that increase curiosity, and which of those do you consciously observe?

That’s fair. To riff off your observation about curiosity feedback loops — I find myself tamping down on curiosity instead of encouraging it sometimes. Too much curiosity can be bad(?)

Idk. Trying to generalise this as a principle and failing. Isn't insight (definitionally) an accurate and deep understanding of something? Were you perhaps thinking of something more similar to epiphany/originality?

I'm thinking of insight as in insightful, a descriptor of an idea or opinion. Perhaps novelty + originality is a better word, as you've suggested.
