Mission profile matters LOTS. The germans were fighting in a target rich environment even against the US/UK due to geography and the fact that they were mostly fighting from home after the Battle of Britain
Just read the wiki page on the guy in the #1 spot, and he's quoted saying that for like the first year of the war he wasn't even worried if a Russian pilot was right on his tail. Evidently the Russians had to hand-paint their gun sights, not very effective.
Also the Russian planes mostly weren't nearly as good as the German ones.
I believe US fighter pilots were allowed to finish their tours after 50 missions, whereas the German pilots who survived were forced to fly hundreds. Barkhorn flew more than 1,000 combat missions and was still flying the last month of the war.
Yeah, German kill numbers against the Soviet air force are what happens when the equivalent of the Great Marianas Turkey Shoot lasts for multiple years.

I think the main thing is that the luftwaffe were just way better tactically than their opponents.
One example is fighters flying in the schwarm/ finger four formation instead of a Vic formation.
