That's what gets me. So many people are like "the US is terrible and we should rip everything out and start over." Do these people not know what terrible actually looks like? Look at how like >99% of your ancestors lived.

There was this fascinating essay I can't find anymore looking at Early Modern fairy tales and pointing out just how food-obsessed they were.

Heck, just look at what life was like for most of the world in the 60s. What constituted a "middle income" country. People could easily live like that in the US if they wanted to and save plenty of money: eat staple foods, live in a cramped apartment and bike everywhere.

If you don't want to do that, that's fine. It's your choice. I'm just saying the quality of life is still much higher.

if you compare modernity to the Black Death we come out ahead but if you look at how Americans lived in 1900 we are sick, pale, and fragile. "eat staple foods" the Green Revolution left us with staple foods with less than half the nutrient content of heritage breeds

if the issue is related to nutrition per unit mass my guess is that much of this is related to crops being bred for size lots of modern stuff is grossly large compared to even recent ancestors, somewhat assume that total nutritional content is similar, but not as concentrated
