further context my actual manager is on paternity leave for another couple months so this will be a conversation with my director also we're not in the office right now so in person is out of the question

People have different opinions on this, but I like to send a short professional email to give them time to digest and think about it, then schedule a follow up meeting to chat details. Otherwise it feels weird like a breakup over zoom imo.

Zoom or telephone call. "hey, do you have a few minutes today. When is a good time?" Then get to the point and don't be emotional. "I've really enjoyed my time here, thanks for the opportunity. But I am going to be moving on effective ___." Then let him alone to process/plan.

I think you should drag him into a Zoom. As a manager, I’d want that. And as others have mentioned, his angle will likely be “can I / should I do something to keep eigenrobot”, so be super clear (politely) that you have decided and it’s not negotiable.
