basically they are a low temp slow cooker thing;designed to keep things at a fixed temp below boiling for 12-96 hours depending on what you’re making you can do it on a stove etc but it’s a lot more hassle

with yoghurt you can buy starter culture or you can use a small amount of commercial yoghurt or some of your previous batch
