when people say “trust science” and point to things like vaccines and airplanes I wonder why they don’t explicitly gatekeep more. like how much are they mentally excluding things that call themselves science like “nutrition science” and poor old psychology?

Aerodynamical models explain a lot about the lift generated by airfoil shaped objects moving through air. They do treat it as a fluid tho not individual particles so in the extreme case if you zoomed in far enough exact explanations may be lacking especially at quantum levels.
