Veganism, like most ideologies, combines a rational reason to oppose animal products, w' a mood affiliation. The mood affiliation isn't wrong btw. If you start eating roadkill, though it's rationally okay, the slippery slope towards eating meat, your "internal measure" screws up.

This is because humans suck at drawing fuzzy boundaries. It's far easier to "not eat any animal products", rather than "no animal products except for these 7 exceptions". In fact the mood affiliation *is* the rational thing to do once you know humans are not perfectly rational!
