I have one point of actual feedback, which is that this is the first time where the guest and you have different enough volume that it is difficult to find a point where one can comfortably hear both (at least on my headphones)

If the audio channels are separate you should be able to normalize the peaks of the recordings to about the same pretty easily, if you have one audio source you're recording both speakers into it'll prob be more effort than you want to put in
