Most of the limitations are, they're there to keep PCs confined in a box until they reach high enough level. The game design philosophy is to put limits on the player so the existing rules can stay balanced, instead of making better and more flexible rules.

I was allowed to carry way too much gear in a campaign because I was the meat shield. Every time we leveled up is just got super blessed with HP. Like if Legolas was swole.

It would have been broken if they were large, because they would just been able to wield oversized weapons for double damage. Granted even if you tripled the damage of martial classes, spellcaster classes would still be vastly better, the game isn't exactly balanced tbh.
