What you want is a Swiss system tournament. It more perfectly assesses relative strengths of competitors, but it lacks the drama of single elimination. And it would be unbelievably expensive to stage one for large team sports.

And it plays havoc with scheduling since you have to be constantly reworking matchups. Not even noticeable with everyone in the same room, but a nightmare when you have to move a whole caravan of players and support staff around while sorting out tv contracts.
