This is a good question! My speculation is a mix between euphony--some words just sound better declined certain ways-- and some words just not evolving in declension as the language developed.

Kind of like how English still has some throwback verb conjugations for no really good reason? If you can find a book on Old Latin, the change is probably traceable.

Oh, and bear in mind the genders are not absolute. poeta, nauta, agricola, are first (feminine) declension but are poet, sailor, farmer. Insula is island and also first but considered neuter.
