If you do just want a straight English reading of the Talmud to at least see what it's like, the entire soncino translation is online for free, here. It's not what most would call the best but it's pretty good. Has the advantage of being old, too. https://halakhah.com/

As for the story of the oven - it's not that G-d isn't always listened to (despite the heretical excitement at the prospect throughout the ages) but rather that the Torah is so categorically prior to any other insight into the divine that even human interpretation of the Torah

must supersede any prophecy or direct message from G-d for all time, for the Torah has given itself to those interpreters and does not remain in heaven.

Practically speaking, you are right though that the Torah's ruling on any act would supersede "G-d telling you" in the literal sense and, if they contradict, you'd be forced to disobey
