Lightly simmered and thrown into pasta with just oil and salt can be pretty nice. If you use "too much" oil while simmering you can salt that and pour it all directly on like a sauce. You see, I did not choose the bachelor life...

- Sauteed mushrooms with herbs and a bit of wine/stock, served over some grain or pasta (chanterelles could be good in this application). Leftovers can be used in an omelette - Risotto - Stuffed mushrooms with whatever filling would do under broiling - Mushroom soup

Risotto. Fairly easy if you have the right ingredients and stick to the basic recipe. Not something you prepare in advance. Takes about 20 minutes of undivided attention, then it's ready to eat. Arguably less hard to fuck up because you pretty much just throw it all in one pot.

Learning how to make risotto has a lot of upside because the basic recipe can be used for many variations. Arborio rice, onions, vegetable(chicken/veal/beef/fish) stock or light broth (careful with salt), olive oil, butter, Parmesan cheese, white wine (optional), pepper.
