Wishing someone pleasant dreams - not sweet, but just pleasant - seems to me to be the most wonderful thing you can tell someone. I think it's why we do it to children. It basicly amounts to a shorthand for, "I hope you live your life well, and are not inadequately burdened"

No, that's correct. It doesn't put unnatural pressure like "Have a good day!" Some days aren't going to be good, no matter what. It can almost be construed as burdening a person. Pleasant dreams is akin to have a pleasant life, worthwhile, fair and happy when applicable.
