It's actually a fairly straightforward difference. Gender dysphoria is based in a realistic appraisal of ones body and disappears or lessens when concrete steps are taken to change it. Anorexia is the opposite- it starts mild and gets worse the closer you come to your "goal".

In terms of complexity, anorexia is clearly more complex- it's a deep seated psychological issue that is often extremely resistant to treatment, and one of the most deadly psychiatric issues. Gender dysphoria, in comparison, is simple, straightforward, and treatable.
