I always thought one was, like, about sexual preference and the other was about experience. Like someone might identify as a Lesbian as in they're only attracted to women but still had been with guys in the past but Gold-Star meant never having been with a guy.

I don't think so? Non-gold-star lesbians were women who were either already in or seeking a lifelong relationship with a woman, and if single exclusively dated women. Having once felt attracted to a man or men they'd had sex with at the time was fine.
