Do you have a preferred type of white wine for the deglazing? I've always gone with something pretty dry with risotto but I'd imagine it's just all individual tastes.

Risotto takes a few tries to get used to making. But cooking with alcohol is great! Wine is the base for a lot of great pan sauces, and I love to sub either red wine or beer in for some of the beef broth in a stew. The alcohol basically cooks out anyway, it's just flavor.
