In math, there’s Thurston’s “Proof and Progress”, plus Gian-Carlo Rota’s essays. And Polya of course, although I didn’t personally find him helpful. I’m drawing a blank for science and engineering, although I feel confident I do know of some good “how to” books in both fields

There's dozens, though I've never collected them. I quite like Littlewood's Miscellanea. And two of the best bios are Skidelsky on Keynes (get the abridged, "short" version), and Gleick on Feynman.
