(Soliciting feedback rather than making an offer just yet but) would any of you be interested if I were to do some coaching/workshops about writing, with a specific focus on how to write more and in ways that are useful to you rather than some abstract notion of quality?

My basic position is that any strategy that increases the amount you write is a good one.

BTW I should have said - as well as valuing effectiveness, I actually specifically like the "writing under a pseudonym that signals that it might be crappy" strategy. I think you undersell your writing by doing that, but I can see why that would be psychologically helpful to do.

I think on the whole the first approach is better, but I’m more of a random person irl, so the latter may be more my style.

FWIW the splurge everything I'm thinking about approach has worked very well for me, and every time I fret about whether it's appropriate and suggest narrowing the field readers go "noooo, we love that stuff"

One thing I’m unsure about is whether to stick to a limited field, which gives some kind of coherence and intent to output, or wherher to splurge randomly, which leads to more room for play and unexpected tangents.
