On reflection I think that I am mostly just out of line on this one. Like this doesn't seem noteworthy to me if I imagine doing it with fresh meat & good hygiene practices, and I'm a city kid with a dim view of the safety & freshness & hygiene of the US meat supply.

If I imagine someone doing this with meat from local animals, processed fresh by trusted local community members, rather than meat trucked a thousand km & processed by under-regulated faceless industrial-scale meat processing corporations, I have a much easier time with it.

Seems pretty similar to steak tartare; with the right meat I believe it is safe, and with the right mix of ingredients it's definitely delicious

I think a part of it is how people shouldn’t be taking extra risks that may tax the health system (like eating raw meat) due to coronavirus
