Exactly same for me. 2 different Mac Mini 5,1.
Installer is corrupt. Use the tool to download a new copy, and re-create installer drive.

You mean use «macOS Catalina Patcher» in diskimage to download a new copy of MacOS Catalina? (Download a copy icon) Have Done that twice on 2 different locations and 2 different machines and 2 different USB disks... Same error

I have now downloaded the installer a third time using the tool. Also downloaded the tool from alternative location. Same error. MacMini 5,1. I got the log files and it seems that it fails on this line (I think):
