First I want to thank you for all this stuff, you are THE BEST! I'm currently running High Sierra and want to upgrade to Catalina (running a 2011 15" Pro) - Would it be best to update to Mojave first and then upgrade? I tried using the Patcher and i had to do a full reinstall
You can go straight to Catalina, I'd recommend using a USB drive for installation for best success.

Hey so I decided to test the waters and load in the Mojave OS, loaded it onto a USB drive and I get the circle with a line after the install completes. I’m sure I’m doing something wrong because I’m an idiot

Just follow the rest of the process and install the post-install patches.
