I wanna do it With my iMac (Mid-2007) But I don't wanna Upgrade the Proccessor. Is there any way for you to Customize the Installer to work with Non SSE 4 Proccessors?
Nope, it's not possible. The kernel of Sierra and later will not boot unless the CPU supports SSE4.1.

No, it's not possible. Just upgrade the CPU, it's not that hard.
