Is the resolution even dependent on -pix_fmt? My incoming video stream should be 1080p. Most other pix_fmt settings I've tried immediately fail too like yuvj420
pix_fmt is the colorspace encoding, nothing to do with resolution, it's possible the v4l2 device exposes multiple video streams at different resolutions. can you ffprobe it?
i think you just need to specify -video_size 1920x1080
