For technical interviews, do “choose your own adventure” - either a take home project OR pair programming with the interviewer OR whiteboarding OR (etc.). Give candidates their best chance to show you what they can do.

I’ve heard interviewees should be compensated for take home work:pair programming style interviews. What’s your take on that?

That is a nuanced call. I prefer that my candidates have some skin in the game, and the easiest resource is time, on the other hand, I never want them to lose money. If the interview process causes pain then you are doing it wrong. It's always stressful, but pain? No.
