So it's pretty much setup now, just need to figure out how to stream this so it doesn't look like 2 eyeballs for the viewers LEL

You'll want to right click on the headset icon and click "Display Mirror" then capture on your streaming PC that window.

You'll then have to right click on it's source > filter > + > Crop and Pad then crop it down to one eye (usually the right side is best). There really isn't a direct way to do it that is simple, which is incredibly annoying, at least for now.
