@Twitch if you ask me. Why don't they verify first if the DMCA request is even valid.
Because they are required by law to take the infringing channel down immediately.

Even then It doesn't take that much time when they provide a timestamp. Since you fall under Twitch they should protect you until proven guilty. Saves a lot of frustration and work for everyone involved. Glad it got resolved

For UK content on UK channels on UK servers? The DMCA doesn't even legally apply here.

The service provider in this situation is Twitch and because Twitch is US-based, a claimant can use the DMCA takedown process to get content removed from the platform.
