DigitalOcean! Like AWS, they have datacenters all over the world. And they're very easy for new people to use.

Looks nice, but both are under US jurisdiction. I trust my local provider more, but I’d like to avoid the new mandatory data retention.

There's no reason you can't deploy to your own server on a different cloud provider. It's option 5 in the install script.
