If your appeal results in a video takedown/strike, you can still file a counter notification. If your counter goes through, your video will be reinstated and any strike resolved. The copyright owner would have to file a lawsuit to keep your videos from being reinstated.

Unfortunately, we're not in a position to make judgments on fair use. We can also see how the process could be intimidating, but this is how copyright law balances the interests of creators and copyright claimants.
