But does Palindromic mean that it reads the same if read both from right to left and from left to right? In case, it seems that also other dates can be palindromic, making this less rare: e.g. 12/02/2021 etc

Your example only works for one area of the world (e.g., month/day/year or day/month/year) but not both.
