When people ask me whether I'm front end or back end I launch into this whole "so what I do is like making games so I work on a lot of visual stuff, but I also handle graphics optimization and networking protocol stuff, so I wanna say full stack (?), but also I do art for assets"

And then there's "what do you do for your project" question and that spirals into "on top of coding I do a lot of pitching + raising awareness, also UX, also I spend a lot of time reading papers, also demoing all day every day, also documentation, also Hololens hardware stuff?"

I usually preface with "it's kinda like game dev" but I feel like that still confuses people

I'm not really sure. I normally answer: 'I'm on a project with 2 programmers so we do a little bit of everything'. It's hard when your role isn't a clear specific job. But most people I interact with professionally are also indies so they know what it's like.

At my previous job I had a much more specific role but it was working on things most people have never heard of. So I normally ended up explaining what I did on the project, what that project actually was and what it was used for.
