Legit question though, is there a sufficiently informative + concise way to answer this? 
I usually preface with "it's kinda like game dev" but I feel like that still confuses people 
I'm not really sure. I normally answer: 'I'm on a project with 2 programmers so we do a little bit of everything'. It's hard when your role isn't a clear specific job. But most people I interact with professionally are also indies so they know what it's like.
At my previous job I had a much more specific role but it was working on things most people have never heard of. So I normally ended up explaining what I did on the project, what that project actually was and what it was used for.
That's real.
A part of me secretly hopes that when people ask you what you do, you pull your phone out and start playing those videos of people crashing into each other
