Edge computation and blockchain seem like polar opposites. If they don't need BFT, do they still need hash chains/Merkle trees?

for instance: samples of barometric data on controlled devices for analysis that could be done with normal 2-party symm. enc.

Yeah, seems like point-to-point crypto protocols (e.g. TLS!) might be a better fit than a single globally ordered log.
