Suet is beef fat. Ground, but not rendered (like lard is). So not vegetarian, at least in traditional recipe.

Comes from an era when actual meat would have been scarce, hard to store, and expensive. Lots of "euphemism" involved. Like "sweetbreads" (not sweet) (nor bread)

sweetbreads is calf organ meat (sometimes including brain, though these days with prion diseases, unlikely) sweetmeats is another lie word, like mincemeat.
