I definitely read a book about this in college and my drunken memory is that he's supposed to be from a foreign southern land where the people have dog heads and the anthropological explanation is it's a Greek reaction to images of Seth

Well the being from a foreign southern land part is basically correct in that he was supposedly from a dog race from Canaan (just not as south as I remember)
I'm also not sold on "misinterpretation of the Latin term Cananeus (Canaanite) to read canineus (canine)" as the sole causal factor. Seems more likely that was tapping into existing cultural base of legends and imagery (albeit not one with any connection necessarily with Egypt)
