apparently the ones in the east end are like a kind of old style that doesn't even try to be like the NYC ones, so I would expect to be disappointed

I can't figure out why some places are able to produce bagels worthy of the name but others aren't. Montreal can do it. San Francisco can't. Boston can do it. Edinburgh can't. No idea honestly. Fortunately there was no shortage of good breakfast fare but a bagel was not it.

credible theory but I'm not convinced. my favorite counterexample is Edinburgh, which had excellent tap water and excellent bakeries, but couldn't produce a bagel worth a damn.

yeah, necessary but not sufficient I would say. it's a piece of the puzzle for sure though.
