I misspoke - that was actually the price of the coffee. The fee was 1.6 satoshis, or about one hundredth of one cent.

The channel can be reused indefinitely, even if the initial cost was let's say $10 (setting up multiple channels and refilling old channels) That cost would be divided between many hundred/thousand purchases/transactions.

So he paid $10 to set up a channel to pay for a $5 coffee. If he never passes through Brisbane airport again how would he spend the remaining money in his channel? It that really a good use case?

The channel is to the Lightning Network, not to the coffee shop. It's a bit like opening a bank account. You only need to do it once, then you can pay anybody else who has a bank account, not just the bank you have an account at.

No that is incorrect. "Channel" was a poorly chosen metaphor, in my opinion. It's literally just a smart contract: nothing happens until someone updates it.
