I have always recommended the email address is used as the link text. This makes it clear to users that the link is to an email address and will launch a mail client if clicked. The address being visible means a user can still copy it to paste elsewhere if preferred.

Hadn't considered that tbh. Adding a space into the address, or any other unconventional formatting, feels (without wanting to sound like a dick!) like it's putting your needs before the user's? It may be announced in an unusual way by screen readers or AT as well?
