By ethnomethodology I mean not “what’s the best way to teach”, but “how and why teachers choose the methods they do” I.e. the first step towards figuring out a better [thing] is looking at the existing [thing] closely

I don't have great suggestions. There is a very small community of folks (often from the world of comparative education) who take the ethnomethodological approach (e.g. http://werklund.ucalgary.ca/educ_info/profiles/163-130655 …).

However, if I may: I think the question is posed more effectively by swapping out teaching for "supporting others' [skill] development". With that, there's a whole world, some explicitly ethnomethodological, much of which I think one would find consistent with that disposition…
