I get why this is an attractive framing of the issue, but I'm not sure I necessarily see the inconsistency between the Bolton approach to the UN generally and US efforts to resist Chinese influence at the UN specifically.

Moreover, Bolton's career has has in fact taken the UN quite seriously--largely because he sees many of its activities as potentially harmful to US interests. Resisting PRC attempts to use UN as a way of promoting itself would seem to be consistent with that Bolton policy.
