Crypto folks! Is a SHA-256 hash is guaranteed to never be all zeros? I think it would, but not finding an authoritative source on it...

Even if it could be all zeros, you should not be able to find the doc that has that hash, or SHA-256 would be considered broken.

I know, but I want to create a fingerprint based on SHA-256 and treat a value of 0 for the fingerprint as an "empty cell"

All zeroes can happen, if you can’t spare a bit then the digest of an empty input may be the best sentinel value.
