Like I can't tell; is it just a version of the USB audio protocol that supports some kind of volume indicator, which is then implemented in the device? or is it that some devices will tolerate a moderated audio bit stream?

Even worse: When I connect my audio interface directly to my MacBook’s USB ports, the volume slider is disabled — but when I connect it through a hub, the volume controls work fine. ?!?!

Ouch. I'm gonna have to guess that's down to USB protocol implementation intricacies - via the hub it reports capabilities to the OS differently than it does via the integrated controller. There's a bunch of USB management functions that are offloaded to the controller.

Got the exact same annoyance here. Having to move my hand to my Fiio k5 pro to adjust volume is annoying compared to just using the os.

In my experience, when I tell my Mac to send audio to a USB DAC, I *always* lose upstream volume control. In my case I have a biggish old amp with a volume knob driving the speakers, and the knob is a better UX then the mac keyboard anyhow.
