      The common idea of cryptographic security is that we usually can't "prove" security, so we take something that has been analyzed by many cryptographers and noone found any substantial attack. So we prefer well-known and well-tested algorithms over obscure ones.

      but there's a risk in that thinking: If something has the reputation of being very secure already - do people even try to attack it? it may feel like wasted time, because it's very unlikely to yield any substantial result.

      now here's the thing with AES: It was chosen in a competition. But it wasn't uncontroversial. A group of people around Niels Fergusson said that some mathematical structure of Rijndael (which later became AES) was very worrying, very late in the selection process.

      Fergusson later even said he could imagine AES being broken within 10 years. (Should be said that Fergusson was motivated because he was co-designer of one of the more promising, but loosing other AES candidates.)

      some theoretical attacks evolved later out of these concerns. I'm no expert in this, but my understanding is: none of that is substantial or really threatens the security of AES in any meaningful way.

      So ultimatley: By the existence of these concerns, coming from high-profile cryptographers, there was a belief that attacking AES was worth it. Which made it ultimately more likely that if there was anything concerning it would've been found by now.

      Practical key recovery attacks have been demonstrated against AES. It's always potentially just one wrong compiler flag away from leaking secrets. We really shouldn't be mythologizing it, and instead replacing it.

          Yes, the side-channel attacks. There's every reason to have cryptographic confidence in AES, and implemented in hardware or with a very careful implementation it's safe, but we shouldn't lock in on it as a gold standard. We can do better!
