We used this sort of pattern when using containers for game servers. We captured the SIGTERM, set a timeout to the length of a typical game session, then stopped matchmaking users to that server, then shut it down once existing players left.

Funny story: on one of the SunOS platforms we ran out of signals and had to overload SIGWINCH. Apache would shutdown if the admin resized their terminal.
