One of the requests I've had for videos was to go over "databases", what they actually do, and how people do or don't use them correctly for various software engineering problems. Is this a topic of general interest?

From what I've heard and little knowledge on it I have it's a complicated topic, and everything that is complicated and can be "caseyfied" (-> explained in a simple and/or understandable way) is a net-benefit in my book.

Databases are a complicated topic (I used to get paid to write database servers, believe me I know), but I don't think Casey is planning to go into the finer points of rollback logs or why textbooks skip over the B-tree deletion algorithm.
