Are there any examples of people giving "talks" on twitch/youtube directly, versus giving a talk remotely at a virtual/remote conference? I'm realizing now that giving a talk in that way sounds pretty fun and easy to me, since i already have a lot of that infra built up

Not really. I don't see conferences or in-person presentations as being beneficial. I see them as mostly vestigial remains. Live-streaming opens up lecture content to the entire world, for very low cost. It seems a strictly egalitarian improvement, no COVID necessary.
