So even taking into account there are other phones developed by companies other than Apple, can it still be said the developers are “forced”? They can choose an entirely different platform/hardware; doesn’t count?

Just to be clear: Apple customers pool counts one billion users. Have you any idea what it means to give up on such a colossal user base? C'mon. Have you ever developed commercial software where you need to make money to eat? If the answer is no, then first know the field.
