      The idea of simple ingredients is very romanticized, though. What we consider “simple ingredients”, like flour or lemons, are hard to produce at scale for a good price and there is quite some infrastructure needed - so maybe both things aren’t that different?

      I don't think so. Nobody thinks it's a "bad idea" to have a lemon tree in your yard and use the lemons, or have a chicken and gather the eggs. In code, people are scoffed at for suggesting they might want to use lemons from a tree they grew themselves.

      Certainly nobody would fault you for buying lemons at the store, but nobody says that the "best practices" for making lemonade are to use the most commodity lemons you can find, and to carefully eschew those grown in small family farms or on your own property.

          If you're running a commercial kitchen then yes, growing your own lemons is a giant waste of time/money

          Some restaurants definitely grow their own ingredients in an onsite garden, actually, so that they have tighter control over the quality of the produce and spices. There are places like that where I live in Houston. They aren't seen as wasting time or money.

          Fortunately, for me as a dev, software doesnt grow in trees, you know... It is the product of human deliberation, trial-and-error, consensus. I think its more like politics, than like food. It is rarely a good ideea to build your own administration...
