Regardless this had a hugely negative impact on what I perceived as my prospects, so I went for a quality assurance job next thinking I was just not fit for the task of software development. It took -years- to regain confidence and eventually go back to software engineering. 2/

I think this is as much of a reflection on American employment law as it is on you.

I'm not sure if I'm at the point where I'd say somebody shouldn't legally be able to fire "at will", etc. But I'd argue in a lot of cases the employers are simply shooting themselves in the foot in the way they often refuse to work on cultivating employees long term.

Once I've been rejected following a phone interview, being told I was lacking skills because I had not given exactly the expected answers. It did not bother me too much because it was not my dream job, but still, it was a bit rude

They provided a great service to you by filtering themselves out of your life with a completely nonsensical method of screening employees from the sounds of it. Not too uncommon unfortunately.
